Barquillos Recipe

INGREDIENTS:

  • 1/4 cup all- purpose flour, sifted
  • 3/4 cup fresh milk
  • 5 egg yolks, lightly beaten
  • Sugar, to taste
  • Lemon rind, finely crushed

HOW TO COOK:

  1. Prepare and grease both sides of a flat wafer iron or barquillera (you can buy this, have it customized, or improvised).

  2. In a mixing bowl, pour- in the sifted flour then set aside.
  3. In another bowl, combine the milk and egg yolks.
  4. Pour this mixture on the bowl of flour and mix until the batter is smooth.
  5. Add sugar and lemon rind, mix, then set aside.
  6. Put the greased mold over medium heat.
  7. Drop a teaspoon of the batter on the middle of the mold.
  8. Put the two sides of the mold together so that the batter is wedged in the middle.
  9. Continue cooking the batter on both sides until brown.
  10. Using a greased, cone- shaped wooden stick, shape the barquillos while still warm and soft.
  11. Let it cool and harden. Serve and enjoy!
