Apan Apan Recipe

INGREDIENTS:

  • 1 large bunch of kangkong leaves
  • ¼ lb fried pork (try: Tulapho)
  • 5 tbsp coconut vinegar
  • 2 tbsp soy sauce
  • 6 cloves garlic, crushed
  • 1 medium onion, diced
  • 3 tbsp bagoong/ alamang
  • Salt and pepper, to taste
  • 3 tbsp cooking oil

HOW TO COOK:

  1. In a large wok or pan, pour- in and heat the oil.
  2. When the oil is hot enough, add- in the garlic and cook until brown.
  3. Stir- in the onion and continue to cook until soft.
  4. Add- in the fried pork and saute for a few minutes.
  5. Stir- in the bagoong/ alamang.
  6. Pour- in the vinegar and let it boil then stir.
  7. Pour- in the soy sauce then stir.
  8. Add- in the kangkong leaves then toss.
  9. Sprinkle the salt and pepper.
  10. Toss and make sure that all ingredients are well blended.
  11. Cook for another 2 to 3 minutes.
  12. Remove from heat and transfer to a serving bowl. Enjoy!
