INGREDIENTS:
- 3 lbs pata (ham hock), sliced serving pieces
- 6 cups water
- 6 tbsp soy sauce
- 6 tbsp white vinegar
- ½ beef or pork cube
- 5 pcs dried bay leaves
- 1 tbsp whole peppercorn
- 1 head garlic, crushed
- 1 tsp onion powder
- 1 tbsp granulated white sugar
- 3 tbsp cooking oil
- Salt to taste (optional)
HOW TO COOK:
- In a large cooking pot, boil 8 cups of water.
- Add- in the pata pieces.
- Continue to boil for 60 minutes.
- Discard the water and set the pata aside.
- Heat the cooking oil on the large cooking pot.
- Add the crushed garlic and cook until brown.
- Add the peppercorns and bay leaves and cook for 30 seconds.
- Put the boiled pata in the cooking pot and then pour-i n the water.
- Let it boil, cover, and simmer for 15 minutes.
- Add the beef cube and the soy sauce.
- Cook for 40 minutes in low heat (you may add more water if needed).
- Add the onion powder, vinegar, and sugar.
- Let the mixture boil.
- Stir and cover the cooking pot.
- Continue to simmer for 20 minutes (you may add more water if needed and make sure that there is enough sauce left).
- Add salt (optional). Remove from heat and serve. Enjoy!
