INGREDIENTS:
- 1 lb pork, cut into small cubes
- Juice from 8 pcs calamansi
- 2 cups water
- 1 head garlic, crushed and minced
- Salt and pepper, to taste
- 4 tbsp vegetable oil
HOW TO COOK:
- Combine the pork, calamansi juice, salt, and pepper in a large bowl.
- Mix and marinate for at least one hour, preferably overnight.
- Put the pork mixture in a saucepan then add- in the water.
- Cover the saucepan then simmer over low heat for about 15 to 20 minutes or until the meat becomes tender.
- Remove from the heat, then drain (you can use pork stock for other dishes).
- Pour and heat the vegetable oil in a skillet over medium heat.
- Add- in the garlic and the pork meat then cover.
- Stir the pork to cook all sides evenly.
- Cook the pork until brown.
- Remove from heat. Drain excess oil and transfer to a serving plate. Enjoy!
