INGREDIENTS:
- 1 kg pork belly (use big chunks)
- 1 l white vinegar
- 2 cups water
- 300 g crushed garlic
- 3 pcs white onion puree
- 5 pcs bay leaves
- 1 tsp salt
- 10 g black peppercorn
HOW TO COOK:
- Mix all the ingredients in a large bowl and marinate overnight.
- Place it on large pot then boil for 10 minutes and simmer for 1 hour or until tender.
- Remove oil from adobo fat, and fry skin of adobo belly chunks into adobo oil until golden brown.
- Toss again into remaining sauce.
- Remove from heat and transfer to a serving plate immediately. Enjoy!
