Talong Mushroom Sisig Recipe

If you’re a sisig lover, the struggle is real when you restrain yourself from eating to much! Don’t worry, why not try out this healthy, guilt-free alternative– a sisig recipe made out of eggplant and three types of mushroom! Try it for yourself, here’s an easy to follow recipe:

INGREDIENTS:

  • 1 cup talong, diced small
  • 1 cup tengang daga, chopped
  • 1 cup button mushrooms, diced small
  • 1 cup shiitake mushrooms, chopped
  • 1/4 cup butter or margarine
  • 1 cup red onions, chopped
  • 1/2 cup garlic, chopped
  • 2 tbsp liquid seasoning
  • 1/4 cup calamansi juice
  • 1/4 tsp betsin (msg)
  • 2 pcs green chili fingers (siling pang-sigang), sliced
  • 1 egg, Optional
  • salt, to taste
  • ground black pepper, to taste

HOW TO COOK:

  1. In a frying pan, melt butter or margarine over medium heat.
  2. Add onions and garlic then saute until onions turn translucent.
  3. Add button mushrooms and tengang daga mushrooms then cook for 2 minutes.
  4. Add shiitake mushrooms and cook for another 2 minutes.
  5. Add soy sauce, liquid seasoning, and calamansi juice. Mix well.
  6. Add talong.
  7. Season with salt, pepper, and betsin.
  8. Cook for 5 minutes or until liquid has evaporated. Garnish with green chilies.
  9. Serve and enjoy!

Pakbet Tagalog or Pinakbet Tagalog is a minor twist on the famous Ilocano vegetable dish. The main difference is that Pakbet tagalog uses bagoong alamang instead of bagoong isda.

Since bagoong alamang is more easy to source, why not learn this easy recipe as well? Follow the steps below to achieve a good tasting healthy dish today!

INGREDIENTS:

  • 250 g pork belly, cut into strips
  • 1 pc small onion, chopped
  • 2 cloves garlic, minced
  • 3-4 tbsp, bagoong alamang
  • 2-3 pc medium tomatoes, chopped
  • 1/2 small squash, peeled and cut into cubes
  • 500 ml water
  • 5-7 young okras, ends trimmed, cut into halves diagonally
  • 1/2 bunch sitaw, ends trimmed and cut into 3-inch lengths
  • 1 pc ampalaya, seeded then halved and cut into slices
  • 1 large eggplant, ends trimmed and cut into cubes
  • salt
  • 1 tbsp cooking oil

HOW TO COOK:

  1. Pour and heat oil in a pan and apply medium-high heat.
  2. Add pork and cook until browned and fat rendered.
  3. Lower heat to medium and add the onion and garlic and cook until tender and aromatic. Add tomatoes and cook for about 3-5 minutes or until it becomes soft and the skins peel off the flesh
  4. Add shrimp paste and continue to cook for about a minute.
  5. Add squash and water. Cover the pan and let it simmer for about 2 minutes.
  6. Add yard-long beans, bitter gourd, and eggplant. Season with salt if needed.  Cook for about 2 minutes. Add the okra and cook for another 2 minutes or until vegetables are tender yet still a bit crisp.
  7. Transfer to a serving plate and serve with rice and your favorite fried meat. Enjoy!

Pinoy Style Potato Wedges Recipe

INGREDIENTS:

  • 3 pcs large potatoes
  • 2 tbsp butter (or margarine), melted
  • 1 tsp garlic, minced
  • 2 tbsp parmesan cheese, grated
  • 14 tsp paprika

HOW TO COOK:

  1. Preheat your oven to 190°C.
  2. Grease a baking sheet with cooking oil.
  3. Scrub outside of the potatoes with water.
  4. Cut each potato lengthwise into 8 wedge pieces.
  5. Lay the potato wedges on their side in the greased baking sheet.
  6. Combine the melted butter or margarine and the garlic in a mixing bowl.
  7. In a separate mixing bowl bowl combine the grated parmesan cheese and paprika.
  8. Brush potato wedges with half of the butter mixture and sprinkle with half of the cheese mixture.
  9. Put the baking sheet in the center of the oven and bake for 20 minutes.
  10. Remove the baking sheet from the oven then turn the wedges over and brush them with the remaining butter mixture and sprinkle them with the remaining cheese mixture.
  11. Return the baking sheet to the oven and bake for an additional 20 minutes or until potatoes are crisp on the outside while still tender on the inside.
  12. Remove from oven and transfer to a serving plate. Enjoy!

Okoy Kalabasa Recipe

INGREDIENTS:

  • 1/2 cup medium sized shrimps, heads and skin removed (use the whole shrimp if you have small ones)
  • 1 cup butternut squash, julienned or grated
  • 1/4 cup carrot, grated or thinly sliced
  • 1/8 cup green onion, thinly sliced
  • 2 cloves garlic, minced
  • 1/2 cup flour
  • 1/4 cup cornstarch
  • a dash of ground black pepper
  • 1 whole egg, beaten
  • 1/3 cup water
  • 1 tbsp. fish sauce
  • 1 cup oil, for frying

HOW TO COOK:

  1. In a bowl, mix together the flour, cornstarch, egg, garlic, water, fish sauce and pepper. Make sure the mixture is free of lumps then set aside.
  2. Wash and peel the squash and carrot then grate them. If you do not have a grater, slice them thinly as possible. Slice the green onion thinly as well.
  3. Add the grated squash & carrot, green onion and shrimps into the prepared mixture then mix well.
  4. Heat cooking oil in a frying pan. With a slotted spoon, scoop some batter (allowing excess batter to drip off) and place in the pan like mini pancakes. Fry each side until light brown and crispy.
  5. Drain excess oil from each Okoy fritter with a paper towel or strainer.
  6. Serve and enjoy your okoy kalabasa!

Crispy Eggplant Recipe

INGREDIENTS:

  • 2 pcs. large-sized eggplant
  • 2 cups breadcrumbs
  • 2 pcs. egg
  • 2 tbsp. cornstarch
  • 2 tsp. salt
  • ¼ tsp. paprika powder
  • ⅛ tsp black pepper powder
  • Cooking oil, for frying

For the dipping (optional):

  • 2tbsp. sour cream
  • 2 tbsp. natural yogurt
  • Extra virgin olive oil, a drizzle
  • 1 tbsp. coriander leaves
  • ⅛ tsp. black pepper powder
  • ¼ tsp. salt

HOW TO COOK:

  1. Cut the eggplant into slices ½″ thick and then into 1″ width.
  2. Lay eggplant sticks on a layer of kitchen paper avoiding overlaps.
  3. Pour the salt all over and then cover them with another layer of kitchen paper.
  4. Place a weight on it for 30 minutes to squeeze out the excess of water.
  5. Remove the weight and the kitchen paper.
  6. Season the eggplant sticks with black pepper and paprika powder. Then pour cornstarch all over.
  7. Beat the eggs in a flat dish and pour the breadcrumbs on another plate.
  8. Coat the eggplant sticks with the beaten eggs and successively on the breadcrumbs.
  9. Heat a large pan with cooking oil and fry the sticks until golden brown.

For the dipping (optional):

  1. Mix the sour cream with the yogurt, salt and the black pepper powder.
  2. Top with coriander leaves and a drizzle of extra virgin olive oil.

Ensaladang Labanos Recipe

INGREDIENTS:

  • 2 cups labanos (daikon or oriental radish), thinly sliced
  • 1pc medium-sized tomato, thinly sliced
  • ½ cup flaked smoked fish
  • ¼ cup vinegar
  • 1 tbsp chopped green onions
  • 1 tbsp sugar
  • ½ tsp salt
  • Black pepper, to taste

HOW TO COOK:

  1. In a bowl, mix the vinegar, sugar, salt and pepper until well blended then set aside.
  2. Blanch the labanos in salted boiling water for 30 seconds.
  3. Transfer to a colander and place under cold running water for 1 minute.
  4. Drain thoroughly and set aside.
  5. Combine the labanos, tomato, green onions and flaked smoked fish in a bowl.
  6. Add- in the vinegar mixture then mix together gently.
  7. Chill thoroughly before serving. Enjoy!

Stuffed Eggplants Recipe

INGREDIENTS:

  • 2 eggplants, cut in half
  • ½ kg  ground beef
  • 3 cloves of garlic, chopped
  • 1 cup of drained diced tomatoes
  • ½ onion, chopped
  • 1 cup of grated cheddar cheese
  • 1 chopped green onion, for garnish

HOW TO COOK:

  1. Preheat the oven to 400 F or 200 C.
  2. Using a spoon, remove the flesh from the eggplant, leaving about half an inch from the skin.
  3. Place the eggplant shells on a baking tray lined with aluminum foil.
  4. Chop the removed flesh into smaller pieces.
  5. Add some oil to a preheated pan.
  6. Put the onion, garlic, and eggplant flesh in.
  7. Saute over medium high heat for 2 or 3 minutes or until the eggplant is tender.
  8. Put the ground beef in and stir and fry until browned.
  9. Spoon the mixture into the eggplant shells and sprinkle the tomatoes over the top.
  10. Bake them in the oven for 15 minutes.
  11. Remove from the oven and sprinkle the cheese over the top.
  12. Place them back in the oven for an additional 5 minutes or until the cheese melts.
  13. Garnish them with some chopped green onions. Serve and enjoy!

INGREDIENTS:

  • 14 pcs large shiitake mushrooms, stems removed and caps sliced in half
  • 1/4 cup garlic, finely minced
  • 2 tbsp soy sauce
  • 1 tbsp sherry (or dry white wine)
  • Brown sugar, to taste
  • Salt and ground black pepper, to taste
  • 2 tbsp olive oil

HOW TO COOK:

  1. Pour and heat the olive oil in a frying pan over medium heat.
  2. Add- in the garlic with salt and pepper.
  3. Fry for 2 to 3 minutes or until golden brown.
  4. Set aside a tablespoon of the fried garlice to use for garnish later.
  5. Add- in the mushrooms to the pan and sauté over medium heat for about 3 to 4 minutes or until softened.
  6. Lower the heat to medium-low and stir- in the soy sauce, sherry wine, and sugar.
  7. Sauté for 1 minute to let the wine evaporate then season to taste.
  8. Remove from heat and transfer to a serving dish then top with fried garlic. Enjoy!

  • 1 big bunch baby bok choy, chopped
  • 1/3 cup meat of choice (pork, beef, chicken, peeled shrimp) thinly sliced
  • 2 pcs large tomatoes, chopped
  • 2 tbsp patis
  • 3 pcs siling labuyo
  • 2 tbsp cooking oil

HOW TO COOK:

  1. First, wash the chopped bok choy thoroughly and drain then set aside.
  2. Pour and heat the cooking oil in wok or saute pan.
  3. Add- in the onions, garlic, and tomatoes then cook until soft.
  4. Add- in the siling labuyo and meat then stir fry for 5 minutes or until meat is cooked.

INGREDIENTS:

  • 1 bunch young long Asian eggplant, cut crosswise at 1 & 1/2 “ lengths
  • 1/3 cup soy sauce
  • 1/4 cup white vinegar
  • 3 pcs bay leaf
  • 1/2 head garlic, crushed
  • 1 tsp peppercorns, crushed
  • Cooking oil

HOW TO COOK:

  1. Heat generous amount of cooking oil in a wok or frying pan.
  2. Stir- in the garlic, crushed peppercorns, and bay leaf, then stir cook for a minute.
  3. Add- in the eggplant and stir cook for about 2 minutes.
  4. Add- in 2/3 to 1 cup of water, vinegar, and soy sauce, then let simmer for 2 to 3 minutes at low- medium heat without stirring.
  5. Give a quick stir and cover the wok or pan and let cook for 5 to 8 minutes or until the liquid has turned to an oily sauce (stir occasionally).
  6. Remove from heat and transfer to a serving bowl. Enjoy!
