Pinakurat Recipe

Sukang Pinakurat is a very popular version of spiced vinegar here in our country. It matches a lot of fried dishes so why not have your very own at home! See full recipe below:

INGREDIENTS:

  • 740 ml Coconut Vinegar (25 oz fluid)
  • 8 cloves Garlic, divided
  • ¼ cups Ginger, sliced and divided
  • cup red chilis, divided (labuyo)
  • 1 cup Patis (Fish Sauce)
  • 2 teaspoons Onions, Sliced

HOW TO MAKE:

  1. Prepare a blender or a food processor.
  2. Add 1 cup of vinegar, 4 garlic cloves, ⅛ cup ginger, and ½ cup red chilis. Blend everything until it becomes a smooth texture.
  3. Pour in the remaining 2 cups vinegar and continue blending. Add in patis and blend it again. If patis is not available, you can substitute it with salt.
  4. Using a funnel, pour in mixture into a sterilized bottle (or any container). Then, add chopped onions and labuyo (or red chilis), ginger, and garlic.
  5. Serve or store for later.

Homemade Chunky Peanut Butter

INGREDIENTS:

  • 1 cup (150 grams) raw peanuts
  • ¼ tsp (1.25 grams) salt
  • ¼ cup (50 grams) brown sugar
  • ¼ cup (60 grams) melted butter
  • ¼ cup (54.5 grams) vegetable oil

HOW TO MAKE:

  1. Put the raw peanuts on a preheated pan on high heat. Make sure the peanuts are evenly leveled. Slightly cover the pan, lower the heat, and roast peanuts until lightly browned or until it gives off a popcorn like smell.
  2. Put the roasted peanuts, melted butter, vegetable oil, salt, and sugar on a food processor or blender. Grind it for 2-3 mins or until the desired consistency and texture.You can add more salt or sugar to taste if needed. Note: you can add a bit more oil or butter if your blender/processor is having a hard time grinding the peanuts

INGREDIENTS:

  • 1 & ¼ cup pig liver paste (use a food processor)
  • 2/3 cup bread crumbs
  • ¾ cup apple cider vinegar
  • 2 & ½ cups water
  • ⅔ cups brown sugar
  • 2 tbsp garlic, minced
  • ½ cup onion, minced
  • Salt and pepper, to taste
  • 2 tbso cooking oil

HOW TO MAKE:

  1. Pour and heat the oil in a pan.
  2. When the oil is hot enough, sauté the garlic and onions until the texture becomes soft.
  3. Add- in the liver paste and cook for about 5 minutes in medium heat while stirring.
  4. Add- in the vinegar and bring to a boil then stir for a minute.
  5. Pour- in the water and bring to a boil.
  6. Stir- in the brown sugar and cook for 2 minutes.
  7. Add- in the breadcrumbs and cook for another 2 minutes while stirring constantly.
  8. Add- in salt and pepper to taste.
  9. Turn off the heat and allow the sauce to cool down.
  10. Place the sauce in a blender then blend for a minute.
  11. Transfer the sauce in a serving bowl. Serve with lechon. Enjoy!

Homemade Bagoong Alamang Recipe

INGREDIENTS:

  • 12 oz raw shrimp paste
  • 4 oz pork (with fat), sliced
  • 1 medium- sized tomato, diced
  • 3 tsp vinegar
  • 1 small onion, minced
  • 3 cloves garlic, minced
  • 3 & ½ tablespoons sugar

HOW TO MAKE:

  1. Place the pork in a pan.
  2. Heat and sear the pork until the oil comes out.
  3. Add- in the  garlic, onion, and tomato then sauté for 5 minutes.
  4. Add- in the raw shrimp paste, sugar, and vinegar then stir.
  5. Cover and cook over low heat for about 15 minutes (stir once in awhile).
  6. Remove from heat and transfer to a bowl.
  7. Allow to cool and serve or place in a jar to consume later. Enjoy!

Homemade Sweet Chili Sauce Recipe

INGREDIENTS:

  • 1/2 to 1 tbsp dried crushed chili (1 tbsp makes spicy hot sauce)
  • 1/2 cup rice vinegar (or white vinegar)
  • 2 tbsp sherry (or cooking sherry)
  • 1/4 cup water
  • 3 tbsp fish sauce
  • 3 cloves garlic, minced
  • 1/2 cup & 2 tbsp white sugar
  • 1 & 1/2 tbsp cornstarch dissolved in 4 tbsp cool water

HOW TO MAKE:

  1. Place all the ingredients (except for the dissolved cornstarch) in a sauce pan or pot.
  2. Apply heat and bring to a boil.
  3. Reduce heat to medium and let boil for 10 minutes, or until mixture is reduced by half (note that the vinegar will be quite pungent as it burns off).
  4. Reduce heat to low and add- in the cornstarch mixture.
  5. Stir to incorporate and continue stirring occasionally until the sauce thickens, about 2 minutes.
  6. Remove from heat and taste test.
  7. You should taste sweet first, followed by sour, then spicy and salty notes.
  8. If the sauce isn’t sweet enough, add a little more sugar; if not spicy enough, add more chili.
  9. Allow to cool and pour sauce into a small bowl or jar and serve as a condiment, dip or marinade. Enjoy!

Homemade Garlic Chili Oil Recipe

INGREDIENTS:

  • 250 g garlic, peeled
  • 250 g red or green chili, stem removed
  • 3 pcs star anise
  • 500 ml olive oil (or vegetable cooking oil)

HOW TO MAKE:

  1. Place the garlic, chili, star anise, and the oil in a blender.
  2. Run the blender on high- speed and continue blending until all ingredients turns into a thick paste.
  3. Pour this thick paste on a non- stick pan.
  4. Apply high heat and cook until the color turns golden brown.
  5. Let it cool then transfer it into clean sealed bottles.

Homemade Mayonnaise Recipe

INGREDIENTS:

  • 1 whole egg
  • 2 egg yolks
  • 1 tsp Dijon mustard (you can use regular mustard also)
  • 2 tbsp lemon juice, freshly squeezed
  • ½ tsp salt
  • 2 cups olive oil

HOW TO MAKE:

  1. In a bowl, blend the mustard, egg, yolks, salt, and lemon juice (use a stand mixer or mix manually).
  2. Mix until the mixture becomes creamy.
  3. Continue to mix and start adding the olive oil drop by drop into the creamy mixture (add one drop of oil every 30 seconds).
  4. When the mixture thickens, you can continue to pour remaining oil in a thin, slow drip in 5 to 10 second intervals to ensure it mixes well.
  5. Stop mixing then taste (if your mayo is too thick, add drops of lemon juice and blend until the consistency desired is achieved, if too thin, add droplets of oil).
  6. Scoop mayonnaise into a jar, consume right away or close tightly and refrigerate for later use. Enjoy!

Note: In case you are mixing manually, make sure you are beating or mixing fast enough.

Homemade Sweet & Sour Sauce Recipe

Sweet and Sour Sauce is a great match for many Filipino fried food. I just love dipping my lumpiang shanghai, nuggets, fried wontons, fried fish, and many more in this sauce. If it were some other sauce, it would be weird, agree?

If you go to the supermarket, there are lots of brands to choose from, both local and imported. And it’s kind of frustrating how each differ in taste. Like, why doesn’t it taste like the last one I had in the restaurant?

An even sadder fact is that most of them have these chemicals and preservatives we don’t even know how to pronounce. So I thought to myself, hey, maybe the best tasting ones are made from the freshest and most natural ingredients. Why not learn how to make this sauce at home?

I later found out that making these are actually easy and I’m sharing this recipe to you, so you get to try it at home also:

INGREDIENTS:

  • ¼ cup ketchup
  • 1 tbsp cornstarch
  • 1 cup pineapple juice
  • ½ cup rice vinegar
  • ½ small green bell pepper, seeded and minced
  • ½ cup brown sugar
  • 1 teaspoon salt
  • 1 tbsp cooking oil

HOW TO COOK:

  1. Combine the pineapple juice, vinegar, ketchup, sugar, and salt in a small bowl.
  2. Stir until the sugar and salt are dissolved
  3. Add the cornstarch and stir until well dispersed.
  4. Pour and heat the oil in a sauce pan over medium heat.
  5. Add the bell peppers and cook, while stirring regularly, until softened.
  6. Add the liquid mixture and bring to a boil, while whisking regularly.
  7. Continue to cook, whisking regularly, for about 2 to 3 minutes or until sauce thickens.
  8. Remove from heat, let it cool and transfer to a container. Use for different dishes like lumpiang shanghai and rellenong hipon.

Coconut Jam Recipe

INGREDIENTS:

  • 2 cups coconut cream
  • 1 cup brown sugar

HOW TO COOK:

  1. Combine the coconut cream and the brown sugar in a non- stick sauce pan.
  2. Heat over medium heat and bring the mixture to a boil.
  3. While heating, stir frequently until sugar is dissolved and mixture is well- blended.
  4. When mixture has come to a boil, promptly reduce heat to low and continue to cook, stirring frequently, until mixture darkens and thickens.
  5. To check if the jam is ready, drop a teaspoonful into a bowl of cold water.
  6. If the mixture forms a soft ball in the cold water and flattens when removed, your coconut jam is ready!
  7. Transfer the jam into clean jars and seal.
  8. Serve with bread and enjoy!
