INGREDIENTS:
- 6 pcs small size or 2 pieces medium size kamote (sweet potato)
- 1/2 cup (64 grams) all-purpose flour
- 1/2 cup (104 grams) brown sugar
HOW TO COOK:
- Boil water on a pot. Cook the kamote on the boiling water until soft (try piercing the kamote with a fork. It’s done when you can easily pierce it). Remove from water and let it cool until you can hold it. Peel off the skin of the kamote.
- Mash the peeled kamote with a fork or masher. Mix together the mashed kamote, sugar, and flour until ingredients are fully incorporated. Grab a bit of the mixture (amount that fits your palm) then press it together and mold it into a round, half inch thick, shape. Continue to mold the rest of the mixture.
- Preheat a pan with oil on low-medium heat. Fry the kamote until golden brown. Done.
