Easy Dulce De Leche Cupcakes Recipe

INGREDIENTS:

For the Dulce de Leche:

  • 1/2 cup condensed milk
  • 1 cup evaporated milk
  • 1 pc egg yolk
  • 1 tbsp cornstarch
  • 1/2 tsp vanilla
  • 1 tbsp butter

For the Cupcake:

  • 1 cup all purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1 egg
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/4 cup fresh lemon juice with 1/4 cup water

HOW TO MAKE:

For the Dulce de Leche:

  1. In a saucepan, combine the condensed milk, evaporated milk, egg yolk, and cornstarch.
  2. Mix until the egg and cornstarch is well blended.
  3. Cook over medium heat, while stirring consistently, until mixture becomes thick around 20 to 30 minutes.
  4. Remove from heat and stir in vanilla and butter
  5. Let it cool down.

For the Cupcake:

  1. In a large mixing bowl, sift together flour, sugar, baking powder, baking soda and salt.
  2. Add- in the milk, egg, oil, and vanilla extract.
  3. Mix until all ingredients are well blended.
  4. Boil the lemon juice in a saucepan, remove from heat and immediately then beat into the batter.
  5. Fill cupcake liners until 3/4 full.
  6. Bake in preheated oven at 350 F or 175 C for 15 to 20 minutes.
  7. Remove from oven and let it cool.
  8. Top with the cooked dulce de leche and you can also drizzle with salted caramel sauce. Enjoy!
