INGREDIENTS:
- 2 lbs large- sized shrimp, rinsed well
- 1 cup pineapple juice (you can also use sprite or 7 Up)
- 3 tbsp chili sauce
- 2 tbsp butter (you can also use margarine)
- 6 cloves garlic, minced
- 1 thumb-size ginger, minced
- Salt and ground black pepper, to taste
- Green onion, thinly sliced (for garnish)
HOW TO COOK:
- In a wide pan, put and melt the butter.
- Add- in the garlic and brown in butter over medium heat.
- Remove the garlic and set aside.
- Using the same butter from the browned garlic, sauté the minced ginger until it caramelizes.
- Add- in the shrimp and mix well.
- Add- in the pineapple juice to the shrimps.
- Season with salt and ground pepper.
- Bring to high heat while stirring every few minutes.
- Once the pineapple juice thickens, add- in the chili sauce.
- Reduce the heat to medium low.
- Keep on stirring to allow the chile sauce to cover the shrimps.
- Remove from heat and arrange in a serving platter.
- Top shrimp with the remaining chili sauce mixture, browned garlic, and green onion. Enjoy!
