INGREDIENTS:
- 1 slab (2 kg) liempo, bones removed
- 3 stalks lemongrass leaves
- 3 pcs scallions
- 2 tbsp fresh milk
- 1 small- sized red onion, sliced
- 1 tbsp salt
- ¼ tsp ground black pepper
- 1 tbsp canola oil
HOW TO COOK:
- On a flat surface, lay down the whole slab of pork liempo in a way that the side with the skin is facing down.
- Rub the salt and pepper all over the meat part of the liempo.
- Let it stand for 15 minutes.
- Arrange the lemongrass, scallions, and onion slices on one end of the liempo.
- Roll the end from where you had the ingredient all the way to the opposite end until a spiral shape is formed.
- Secure the rolled liempo by tying it with a kitchen twine.
- Rub the canola oil all over the skin.
- Preheat the oven to 350 F or 175 C.
- Arrange the rolled liempo in a roasting pan, place in the preheated oven and roast for 2 hours.
- Remove the belly from the oven and brush with fresh milk.
- Put it back into the oven and continue to roast for 30 minutes or until the skin is brown and crispy.
- Remove from the oven and let it cool down for 15 minutes.
- Slice the Lechon Liempo crosswise and serve with lechon sauce or Mang Tomas. Enjoy!
