Lechon Liempo Recipe

INGREDIENTS:

  • 1 slab (2 kg) liempo, bones removed
  • 3 stalks lemongrass leaves
  • 3 pcs scallions
  • 2 tbsp fresh milk
  • 1 small- sized red onion, sliced
  • 1 tbsp salt
  • ¼ tsp ground black pepper
  • 1 tbsp canola oil

HOW TO COOK:

  1. On a flat surface, lay down the whole slab of pork liempo in a way that the side with the skin is facing down.
  2. Rub the salt and pepper all over the meat part of the liempo.
  3. Let it stand for 15 minutes.
  4. Arrange the lemongrass, scallions, and onion slices on one end of the liempo.
  5. Roll the end from where you had the ingredient all the way to the opposite end until a spiral shape is formed.
  6. Secure the rolled liempo by tying it with a kitchen twine.
  7. Rub the canola oil all over the skin.
  8. Preheat the oven to 350 F or 175 C.
  9. Arrange the rolled liempo in a roasting pan, place in the preheated oven and roast for 2 hours.
  10. Remove the belly from the oven and brush with fresh milk.
  11. Put it back into the oven and continue to roast for 30 minutes or until the skin is brown and crispy.
  12. Remove from the oven and let it cool down for 15 minutes.
  13. Slice the Lechon Liempo crosswise and serve with lechon sauce or Mang Tomas. Enjoy!
