INGREDIENTS:
- 1 kg chicken thigh fillet, skins and excess fat removed
- 1 pack sweet ham
- 1/4 cup pickle relish
- 2 pcs raw egg
- 16 pcs soft boiled quail eggs, peeled
- 1 pc medium head broccoli, florets separated and stem removed
- 1/4 cup butter, softened
- 1/2 cup queso de bola, grated
- Salt, to taste
HOW TO COOK:
- Process the chicken fillets in a food processor until finely chopped.
- Add- in the ham and process until finely chopped.
- Place the mixture into a large bowl and mix- in the butter, queso de bolas, pickle relish, eggs, and 1/2 teaspoon salt and 1/4 teaspoon ground black pepper.
- Divide the mixture evenly into 4 parts.
- Cover a chopping board with foil.
- Place and form half of the 1 part into a flat log over the board.
- Place the broccoli florets and quail eggs in alternating order in the middle.
- Place the remaining half of the chicken mixture over broccoli and eggs.
- Roll the mixture into a foil log and twist ends closed.
- Repeat with remaining mixtures and fillings.
- Chill overnight or at least 4 hours.
- Prepare a steamer and wait to simmer.
- Once simmering, place logs into the through, about 45 minutes to 1 hour.
- Let it rest before opening.
- Slice immediately before serving or pan fry after steaming, if desired. Enjoy!
