INGREDIENTS:
- 2 small cans sardines in tomato sauce
- 1 medium ripe tomato, chopped
- 2 tsp lemon or calamansi juice
- 1 medium red onion, sliced lengthwise
- 3 cloves garlic, crushed
- 2 pcs siling labuyo (optional)
- 1 tbsp flat leaf parsley, chopped (for garnish)
- 1 tsp fish sauce or salt
- ½ tsp ground black pepper
- 2 tbsp cooking oil
HOW TO COOK:
- Pour and heat the cooking oil in a pan.
- When the oil is hot enough, sauté the garlic and onion.
- When the onion becomes soft, add- in the tomatoes and cook for 3 minutes.
- Pour- in the sardines in tomato sauce and the chilis.
- Stir and let it boil.
- Cook for 5 minutes in low to medium heat (add a little water if needed).
- Add- in the lemon juice, ground black pepper, and salt or fish sauce.
- Stir and cook for 1 more minute.
- Turn off heat and then transfer to a serving bowl.
- Garnish with chopped flat leaf parsley. Enjoy!
