INGREDIENTS:
- 1 & ½ lbs beef tenderloin
- 4 tbsp red wine vinegar
- ⅓ cup soy sauce
- 2 tbsp honey
- ½ cup water
- 1 green bell pepper, sliced lengthwise
- 1 medium onion, sliced
- Salt and pepper to taste
- 4 tbsp extra virgin olive oil
HOW TO COOK:
- Pour and heat 2 tbsp of the olive oil in a cooking pot.
- Put- in the beef and cook for 1 to 2 minutes.
- Add- in the soy sauce and water then allow to boil.
- Simmer for 15 to 20 minutes (you may add more water if the mixture dries up).
- Add- in the honey and red wine vinegar and allow to re-boil.
- Stir and simmer for 10 minutes.
- Turn off the heat and set aside.
- Heat a wok and pour- in the remaining 2 tbsp olive oil.
- Put-in the bell pepper and onion then cook for 3 minutes.
- Add- in the cooked beef tenderloin, salt, and pepper then stir. Cook for another 1 minute more.
- Transfer to a serving plate then serve. Enjoy!
