Pork Mechado Recipe

INGREDIENTS:

  • 1 & ½ lb pork, cubed
  • 1 large potato, cubed
  • 1 medium red bell pepper, sliced
  • 1 medium green bell pepper, sliced
  • 1 cup frozen green peas
  • 3 tbsp soy sauce
  • 1 can (6 oz) tomato sauce
  • 1 & ½ cups water
  • 1 pc pork cube
  • 1 pc lime (you can use calamansi)
  • 5 cloves garlic, crushed and chopped
  • 1 medium onion, diced
  • Salt and ground black pepper, to taste
  • 3 tbsp cooking oil

HOW TO COOK:

  1. In a bowl, combine the pork, soy sauce, and juice of 1 lime (or calamansi) then mix well.
  2. Let it stay for 10 minutes.
  3. Pour and heat the cooking oil in a pot.
  4. Saute the garlic and onion, until the onion gets soft.
  5. Add- in the marinated pork (including the marinade).
  6. Cook until it pork turns light brown.
  7. Pour the tomato sauce and water then let it boil.
  8. Add- in the pork cube and stir.
  9. Cover and cook in low heat for 35 to 40 minutes.
  10. Add- in the potatoes and green peas then cook for 10 minutes.
  11. Add- in the bell peppers, stir, and continue to cook for 5 minutes.
  12. Add- in the salt and ground black pepper to taste.
  13. Remove from heat then transfer to a serving plate. Enjoy!
