Cascaron Recipe

INGREDIENTS:

  • 10 oz mochi or mochiko (Japanese sweet rice flour)
  • 2 cup shredded coconut
  • 1 cup frozen coconut milk
  • 1/4 cup raw sugar
  • Oil, for frying

HOW TO COOK:

  1. Combine the mochiko and sugar in a mixing bowl.
  2. Stir- in the shredded coconut and the coconut milk then blend well.
  3. Scoop teaspoonfuls and deep fry by batches in hot oil until golden brown.
  4. Drain on paper towels.
  5. Let it cool, serve, and enjoy! You may also coat them with syrup.
