INGREDIENTS:
- 1 kg pork belly (or pork shoulder), sliced into 2 cm thick pieces
- 3 tbsp sukang Ilocos (or white vinegar)
- ½ cup calamansi juice (or lemon juice)
- 1 tsp ginger, minced
- 3 red chilies, sliced
- 2 pcs red onions, chopped
- 6 cloves garlic, minced
- Ground black pepper, to taste
- Salt, to taste
HOW TO COOK:
- Combine the calamansi juice, garlic, and salt in a container (with cover).
- Add the pork slices and fully coat it with the mixture.
- Cover the container then let it marinate overnight.
- Prepare a charcoal grill.
- Place the marinated pork on top of grill until it is cooked (let the charcoal flame once in a while as it adds flavor to the pork).
- Remove pork from grill then chop them into smaller pieces.
- Place in a serving platter then mix- in the remaining ingredients. Enjoy!
