Utan Bisaya Recipe

INGREDIENTS:

  • 1 & ½ cups spinach or alugbati
  • 1 & ½ cup squash, cubed
  • 1 to 2 cups string beans, cut into 2 inch length
  • 1 cup patola, sliced
  • 1 medium eggplant, sliced
  • 10 pcs okra
  • 1 medium tomato, wedged
  • 1 cup malunggay leaves
  • 2 thumbs ginger, sliced
  • 5 scallions, sliced
  • 2 siling haba
  • salt, to taste
  • 2 cups water
  • 2 slices baked fish fillet, or any type of fish (optional)

HOW TO COOK:

  1. In a pot, pour- in the water and bring it to a boil.
  2. Add- in the ginger and squash and continue to boil for 8 minutes while covered.
  3. Stir-in the string beans, scallions, okra, and tomato.
  4. Let the liquid re- boil then add the siling haba and the eggplant.
  5. Stir and add the fish (optional).
  6. Cover and cook for 10 minutes.
  7. Add- in the patola and malunggay leaves then cover and cook for 3 to 5 minutes.
  8. Add- in the spinach and add some salt to taste.
  9. Remove from heat and transfer to a serving bowl. Enjoy!
