Yellow Arroz Caldo Recipe

INGREDIENTS:

  • 1 pack (8 oz) yellow rice (Arroz Amarillo)
  • 1 lb chicken, chopped into serving pieces
  • 6 cups chicken broth
  • 2 cups water
  • 6 cloves garlic, crushed
  • 1 tsp garlic powder
  • 1 medium yellow onion, chopped
  • 1 onion powder
  • 1 tsp paprika
  • ¼ tsp ground black pepper
  • 2 tsp salt
  • ¼ cup chopped green onions (for toppings)
  • Hard- boiled eggs (optional)

HOW TO COOK:

  1. Heat the cooking oil in a cooking pot.
  2. Once the oil gets hot, put- in the garlic and then cook in low to medium heat until the garlic turns light brown.
  3. Add- in the onion and continue to cook until the onion gets soft.
  4. Add- in the chicken then stir and cook for 3 to 5 minutes.
  5. Gradually add the yellow rice.
  6. Stir and cook for 2 minutes.
  7. Pour- in the chicken broth and water then stir.
  8. Add the onion powder, garlic powder, paprika, ground black pepper, and salt.
  9. Continue to cook in medium heat for 20 to 30 minutes (cover the cooking pot and stir every 5 minutes).
  10. Add more water or chicken broth if the liquid gets absorbed quickly by the rice (you may also add more salt if needed).
  11. Remove from heat and transfer to a serving bowl.
  12. Top with green onions and serve with hard- boiled eggs (optional) and calamansi (optional). Enjoy!
