Lengua De Gato Recipe

INGREDIENTS:

  • 1 cup all- purpose flour, sifted
  • 2 egg whites
  • 1/2 cup superfine (caster) white sugar
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 tsp vanilla extract

HOW TO COOK:

  1. Preheat oven to 375 F or 190 C.
  2. Using an electric mixer, cream the softened butter.
  3. Gradually add the white sugar and continue mixing the two for another 2 minutes.
  4. Gradually stir- in the egg whites and mix for about 3 to 4 minutes more.
  5. Add the salt and vanilla extract.
  6. Gradually stir- in the flour and continue to mix for about 2 to 3 minutes more or until the mixture is well incorporated.
  7. Get a piping bag and install a round tip.
  8. Place the mixture in the piping bag.
  9. Line a baking tray with wax or parchment paper.
  10. Begin piping the mixture into the lined baking tray.
  11. Each piece should be about 2.5 to 3 inches in length.
  12. Bake in preheated oven for 9 to 10 minutes.
  13. Remove from the oven and place in a cookie/ cooling rack until the temperature cools down.
  14. Place in a container of choice, serve and enjoy!
