INGREDIENTS:
- 10 egg yolks
- 1 & 1/2 cups white sugar
- 1/8 tsp orange zest
- 1/8 tsp lemon zest
- 1 & 1/2 cups water
- 1/2 cup butter
- 1/2 cup white sugar (for the caramel)
HOW TO COOK:
- Boil water in the steamer.
- Caramelize 1/2 cup sugar in a small llanera or flan containers.
- Make syrup by boiling 1 & 1/2 cups sugar and water.
- Add butter to the syrup and let it melt.
- In a bowl, slowly mix egg yolks and pour in the syrup-butter mixture, orange zest, and lemon zest.
- Pour mixture into the flan containers, just enough to fill the containers.
- Place the flan containers on the steamer and steam until cooked.
- Let the flans cool then scrape the sides of the containers. Serve by inverting upside down.
