Easy Enkiwar (Rice Cake W/ Coconut Milk) Recipe

INGREDIENTS:

  • 1 and 1/2 cup malagkit (glutinous rice)
  • water (for soaking the rice)
  • 3 cups coconut milk
  • 1 tsp salt
  • 1/4 kg sugar

Container:

  • Bilao (lined with banana leaves)

HOW TO COOK:

  1. In a bowl, soak malagkit in water for 30 minutes or until soft.
  2. Drain the water from the bowl.
  3. In a pot, boil the coconut milk with salt until about a cup has been evaporated.
  4. Put the malagkit in the pot of coconut milk. Continuously turn to avoid scorching until the rice has dried a bit and has softened.
  5. Cook the softened rice in moderate heat and add the sugar (turn often until cooked).
  6. Remove from fire and place in the bilao lined with banana leaves.
